Lemon Sauce

An easy lemon sauce to go with the Mushroom Patties.
1 lemon, the zest and approximately 3 Tbsp of juice
3 Tbsp castor sugar
2 tsp cornflour
1/4 tsp salt
100ml cold water
Combine all the ingredients together in a small pan.
Bring to the boil. Stir continuously until the sauce is smooth and begins to thicken.
Remove from the heat.
Serve with the mushroom patties.
