Pears Poached in Apple Tea

A versatile sweet served cold on a hot summers day or hot on a winters day.
Ingredients
4 pears, peeled
6 tsp black tea leaves
500 ml apple juice
4 tsp sugar
4 strips of orange peel
4 strips of lemon peel
4 cloves
1 star anise
1 cinnamon stick
4 cardamon pods
Method
Half the pears and remove the cores.
Boil 300 ml of water in a pan and add the black tea leaves to the boiling water. Allow to brew for 2 – 3 minutes. Then pour through a tea strainer. Discard the tea leaves.
Heat the apple juice and tea in a pan. Stir in the remaining ingredients. Add more sugar according to your taste.
Bring the liquid to the boil and then remove the pan from the heat.
Place the pears in a large bowl and  pour the liquid over them, to cover. Cover the bowl and allow to cool.
Place the bowl in the refrigerator for 6 hours.
Serve by removing the pears from the liquid. Put two pears on a plate and decorate with the orange and lemon peel, a clove and cardamon pod. Pour over a little fluid.
Serves 4 people.
The remaining liquid is delicious as a cold drink.
Any remaining liquid can be used later in a fruit salad.
