Green Rice

This was served to us in India and adds colour to a plate of food.
2 cups Basmati rice
5 cups water
1 lemon, zest and juice
salt and pepper
spices of choice ie. turmeric, ginger, garam masala, mixed spice
1 large bunch of spinach
Soak the Basmati rice in cold water for half an hour. Drain.
Bring 5 cups of water to the boil. Add the salt and pepper, zest and juice of the lemon, spices of choice and the Basmati rice.
Cook until all the water is taken up and the rice is fluffy.
Meanwhile wash and cook the spinach in boiling water until soft. Drain.
Puree the spinach.
Toss the spinach and rice together until the rice is all covered and green.
Serve hot.
Serves 4 people.
