Avocado and Apple Dip

This would go well with the toasted zucchini and other dippets.
2 green apples, peeled, cored and chopped
1 avocado
juice of a small lemon
salt and pepper to taste
Place the chopped apple in a small saucepan with a little water – 1 cup. Bring to the boil and simmer for 5 minutes until soft. Drain. Mash until almost smooth.
In a bowl mash the avocado with the lemon juice. Add the apple and mix well. Add the salt and pepper.
Serve with dippets of your choice.

Toasted Stars
Take 4 slices of white bread and with a small star cutter cut out 4 or 5 stars.
Preheat the oven grill.
Arrange the stars on a non-stick tray and grill for 1-2 minutes until golden. Turn once.
Children love this.

The avocado and apple mixture can be served on top of the stars for Hors-d’Oeuvres. If serving in this way leave the apple mixture more lumpy.
