Pasta with an Almond and Mint Sauce

My daughter gave me this recipe. She said it was a good recipe to make when you were feeling annoyed. Gets rid of a lot of suppressed energy!
400 g 14 ozs pasta of choice, cook according to instructions; save a little water
1/2 cup of almonds
2 cloves of garlic, crushed
1 tomato, peeled, seeded and diced
3 cups of mint leaves finely chopped
1/4 cup of olive oil and a little for drizzling
Salt to taste
Blanche the almonds in boiling water for 1/2 minute. Cool. Remove the skins.
With a mortar and pestle ground the garlic to a paste. Add a pinch of salt. Add the almonds a little at a time, pounding all the time. Add the tomato and continue to pound!
Transfer the mixture to a mixing bowl. Clean your mortar and pestle.
Now pound the mint with a pinch of salt to a paste. Slowly add the almond mixture pounding it into the mint. Gradually add the oil pounding all the time. Adjust the salt to taste. Add a little of the pasta water to make the almond mixture into a sauce.
Toss the sauce through the pasta.
Serves 4 people.
Serve on individual plates drizzled with a little olive oil or in a serving bowl. Serve pasta hot.
