Snow Pea, Radish and Avocado Salad

A lovely salad recipe from Wendy for these hot summer days.
400 gm 14 oz snow peas
100 gm 4 oz radishes
375 gm 13 oz Chinese cabbage, finely shredded
2 Tblsp sesame seeds
2 avocados
100 ml 4 fl oz soy sauce
2 Tblsp vegetable oil
100 ml 4 fl oz cider vinegar
1 Tblsp finely grated fresh ginger
4 spring onions, finely chopped
To make the dressing: combine all the ingredients in a jar with a lid and shake well to mix.
Trim the snow peas and thinly slice diagonally.
Trim the radishes and cut them into thin slices.
Place the snow peas, radishes, cabbage and sesame seeds in a bowl.
Add the dressing and toss.
Cut the avocados in half and peel away the skin. Scoop out the flesh. Cut into thick slices. Arrange over the salad.
Serves 4 people.
