Given to me by a friend who said she picked it up in a supermarket.
4 ripe avocados
1 tomato, deseeded and diced small
1/2 a sweet red onion, finely chopped
1 Tblsp chillies, chopped
1/2 cup of coriander, chopped
1/4 cup of lemon juice
salt to taste
croutons to serve
Cut the avocados in half and remove the seed.
Cut out the flesh and mash in a bowl.
Mix in the tomato, onion, chilli, coriander and lemon juice.
Season with salt.
Serve in a bowl on a large platter surrounded with the croutons.
