Tinned chickpeas were on special!
1 tin 400 gm 14 oz chickpeas
1 large cauliflower
2 cloves garlic, peeled
salt and pepper to taste
2 Tblsp olive oil
Preheat the oven to 200 C, 400 F, Gas Mark 6. Place the cauliflower and garlic on a baking tray and sprinkle with salt and pepper. Drizzle with a tablespoon of the olive oil. Roast for 20 – 25 minutes until golden.
Place the cauliflower and garlic in a bowl with the chickpeas and 1 tablespoon of olive oil. Roughly mash.
Serve hot. Serves 4 people.
Serve as an accompanying dish to a main course.
