Refreshing Apple Drink

This drink is non alcoholic. The alcohol burns off as steam before the water evaporates.
2 fl oz 60 ml apple brandy
1 vanilla bean, split and scraped
1 cinnamon stick
2 oz 50 g caster sugar
1 red apple , washed and very thinly sliced
25 fl oz 750 ml chilled soda water
Place the apple brandy, vanilla, cinnamon and sugar in a small pan over a low heat and stir until the sugar is dissolved.
Simmer for 10 minutes.
Remove from the heat and allow to steep for 1 hour.
Place the apple slices in a jug. Pour over the chilled soda.
Spoon the apple syrup into 4 glasses and pour over the apple soda. Serve with a straw and crushed ice if liked.

    • Thank you, Sharyl, I get my information form many places but mostly friends, talking with chefs books and magazines and modifying recipes to make them vegan. What was/is your mission.
