Apple Tart

My brother-in-law, Ian, gave me this recipe when he lived in South Africa. He was worried that there was no alcohol in the recipe but felt that this drawback was overcome by the delicious flavours.
8 ozs 225 gms stewed apples
4 bananas, mashed smooth
8 ozs 225 gms flour
4 ozs 125 gms sugar
4 ozs 100 gms vegan margarine
2 Tbls desiccated coconut
1/2 tsp salt
8 ozs 225 gms coconut cream
Mix the flour, sugar, margarine and salt until it is like breadcrumbs.
Grease a pie dish and cover the base with half the breadcrumb mixture.
Add the stewed apples. Cover with the mashed bananas and sprinkle over the coconut.
Cover with the rest of the breadcrumb mixture. Do Not pat down or fiddle with the result.
Bake in a pre-heated oven 160C, 325F, Gas Mark 3 for 20 minutes.
Serve hot with a spoon of coconut cream.
Delicious cold the next day.
