Tahini Salad Dressing

Good over a lot of salads.
5 fl ozs 150 mls tahini paste
2 cloves of garlic
salt to taste
5 fl ozs 150 mls lemon juice
cold water
1/2 tsp groud cumin
2 Tblsps finely chopped parsley
Crush the garlic with a pinch of salt and mix well with a little of the lemon juice in a large bowl. Mix in the tahini paste. Add the remaining lemon juice and a little cold water to achieve a thick creamy paste.
Beat well. Add the cumin. Taste and adjust the lemon juice and seasoning until the flavour is fairly strong and tart.
Garnish with parsley.
