Baked Fruit

Ingredients
4 pears, peeled but not cored, they look good if the stalk is left on
4 apples, peeled halfway and cored
3 ozs 75 gms raisins
3 ozs 75 gms brown sugar
1 ozs 25 gms vegan margarine
5 fl ozs 150 mls of orange juice
5 fl ozs 150 mls of water
1/2 ozs 15 gms cornflour
Method
Stand the fruit upright in a large pan. Stuff the centre of the apples with the raisins, and sprinkle on 1 ozs 25 gms of the sugar then top with a nut of margarine. Add the orange juice, water and the rest of the sugar. Cover and cook gently until tender, basting occasionally.
When cooked remove the fruit from the pan onto a serving dish. Mix the cornflour in a little water to a smooth paste. Add to the syrup and boil until it thickens. Pour over the fruit.
Serve either hot or cold with the orange sauce.
Soya yoghurt or coconut cream tastes good too.
