Radish and Orange Salad

Another very old but colourful, refreshing and delicious recipe.
1 bunch of small radishes
1 orange
2 Tblsp olive oil
1 Tblsp lemon juice
1 Tblsp lemon zest
1 tblsp snipped chives
1 small lettuce
Trim and wash the radishes. Slice thinly.
Peel the orange removing all the pith. Cut the orange into slices. Cut the slices of orange into quarters.
In a jar with a lid shake together well the olive oil, lemon juice, zest, chives and any seasoning to taste.
Make a bed of lettuce in the bottom of the bowl.
Arrange half of the oranges in the bowl over the lettuce and cover with the radishes. Pour over the dressing.
To decorate, sprinkle with chives and the remaining orange quarters.
Serves 4 people.
