Passion Fruit Jam

I can only make a small quantity of passion fruit jam because Rogan my 3 year old grandson loves to pull the fruit off the vine before they are ripe and once picked they do not ripen any further. Also the possum loves to eat the just ripe ones in the night!
600 mls 1 pt passion fruit pulp
450 gms 1 lb sugar
2 tsp lemon juice
Heat the pulp for a few minutes only. Add the sugar and lemon juice and stir until it is all dissolved. Then boil rapidly until setting point is reached. (Setting point was described in ‘Lemonade Marmalade’.)
Spoon into hot jars, seal and label.
Makes 750 gms 1 2/3 lbs of jam.
Guava pulp can be used instead of passion fruit to make Guava Jam.
