Fried Bananas and Cherry Tomatoes

RFried Bananas and Cherry tomatoesA quick simple recipe that can be used as a Dessert, Breakfast or Snack. As you can see from the picture I prepared a single helping for myself while Tony was away.
Ingredients
4 bananas
20 sweet cherry tomatoes
2 Tblps rice oil
maple syrup
Method
Heat the oil in a large frying pan; rice oil heats to a higher temperature than olive oil.
Peel and halve the bananas and add to the oil. Add all the tomatoes and roll to coat them in oil.
Turn the bananas after 2-3 minutes.
Maple syrup may be drizzled over the bananas at this stage and it will caramelise in the heat. Or the syrup may be added when serving.
Cover the pan with a lid and cook for a further 2-3 minutes.
Serve hot, with the syrup poured over the bananas at this stage if required.
Serves 4 people.
If serving as a sweet soya yoghurt or coconut cream may be added.
