Baked Banana

This is an old favourite that I had forgotten. The children use to love it now I must try it on my Grand children.
4 bananas
50 gms 2 ozs margarine
50 gms 2 ozs brown sugar
1 lemon
Skin the bananas and cut them lengthwise. Place them side by side in a baking dish. Sprinkle the sugar over them, cube the margarine and place on top. Sprinkle over the zest of the lemon.
Cook in a moderate oven 180 C, 350 F, Gas Mark 4 for 10 minutes until they are soft.
Serve with a little lemon juice poured over. Serves 4 people.
