Oriental Pilav

The recipe was given to me by Roberta.
Ingredients.
1 cups basmati rice
5 cups of water or vegetable stock
2 onions, peeled and chopped
1 Tblsp olive oil
100g 4 ozs almond sticks
200 gms 8 ozs currants
1 tsp turmeric
Method.
Sauté the onions, almonds and half the rice in the olive oil, in a pan. Stir and mix continuously with a metal fork until the rice is golden.
Remove from the heat and add in the currants and remaining rice. Mix well.
Add boiling water or the stock. Add the turmeric and return to a low heat with the lid on. Simmer until the fluid is absorbed.
Serves 4 people.
Delicious with cooked mushrooms.
