FRIED PUMPKIN

We ate this dish with our meal last night. Usually I roast or steam and mash pumpkin but we were served fried pumpkin in Russia and enjoyed it. Very simple to do.
Ingredients
250 gms 8 ozs of a pumkin
vegetable oil
salt
small bunch of parsley
Method
Remove the seeds from the pumpkin and peel it. Cut the pumpkin into thin slices. Sprinkle with salt
Heat the vegetable oil in a pan. Add the pumpkin and fry for 3-5 minutes until golden.
Remove from the oil and pat dry on kitchen paper.
Serve decorated with chopped parsley.
Makes a good accompanying dish. They are also delicious as a snack.
