Loh gave us this recipe while we were in China. It is very refreshing.
1 medium green papaw
1 Tbsp shredded carrots
4 cherry tomatoes
4 button mushrooms, sliced
2 Tblsp chopped peanuts
2 cloves garlic
1 red chilli
1 Tblsp sugar
juice of 1 lime
1 tsp salad dressing
Peel the papaw. Cut the papaw into fine shreds.
Place the garlic and chilli in a mortar and pound them. Add the cherry tomatoes and crush them. Mix in the sugar and salad dressing. Add the papaw, mushrooms and carrot. Stir well until all the ingredients are coated.
Squeeze the lime juice over the salad on a serving dish.
Scatter the peanuts on the top.
Serves 4 people.
