Pumpkin Mashed

1 lb 450 gms pumpkin
1 oz 25 gms vegan margarine
1 tsp cinnamon
salt and pepper
Peel pumpkin and remove pips. Cut into chunks and boil for 15 minutes until tender. Drain well. Return to a gentle heat for a minute to dry off moisture, do not allow to stick or burn.
Mash the pumpkin with the margarine, cinnamon and seasoning.
Serve very hot with a main course. Serves 4 people.
