Vegetable Barley Soup

We are having most unseasonable weather it is down to single figures with low lying mist on the mountains and ghutti in the air and we are neither in the UK nor Africa but Far North Queensland the Sunshine State! What we all need is a bowl of hot soup to warm us up.
4 ozs 125 gms barley
1 Tblsp oil
1 onion, chopped
1 clove garlic, crushed
1 carrot, grated
3 sticks of celery, chopped
1 1/2 pts 1Lt vegetable stock
1 Tblsp parsley, chopped, save a little for garnishing
juice of 1 lemon
salt and pepper
Heat the oil and add the garlic and onion, carrot and celery. Sauté until soft and then add the stock, barley, parsley and seasoning. Bring to the boil and simmer for 1 hour.
Stir in the lemon juice and serve hot decorated with a little parsley. Serve with warmed bread rolls or baps.
Serves 4 people.
