Saute Potatoes

VEGETABLE DISH
From Emma who is very Irish.
Ingredients
11/2 Lbs 700 gms potatoes
2 Tblsp olive oil
1 oz 25 gms vegan margarine
salt and pepper
1 Dsp chopped parsley
Method
Scrub the potatoes and boil in their jackets until just tender.
Drain, peel if you want, and slice. Heat the oil in a frying pan. When hot add the margarine. Slip in the potatoes all at once. Add seasoning and saute until golden brown and crisp. Occasional turning them
Remove onto kitchen paper to drain.
Serve on a warm plate sprinkled with parsley.
Serves 4 people.
Variation
Saute Potatoes with Onions
Slice and fry 1 onion until brown . Add the saute potatoes. Mix together and serve sprinkled with the parsley.
