Red Cabbage and Apple

Val served this cabbage to us at a dinner party. The notes that she sent me read “I either cook this in the oven, if convenient , otherwise on the hob”. The dish is super for dinner parties because you can cook it before and it re-heats well.
1 1/2 Lbs 700 gms red cabbage, cut into strips
1 Lb 450 gms baking apples, peeled, cored and sliced
3 Tblsp brown sugar
salt and pepper to season
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp ground cloves
If cooking in a casserole dish in the oven – layer the cabbage, apples, sugar, spices and seasoning. Cook slowly for1 1/2 hours at 150C, 200F, Gas Mark 2. Stir occasionally.
If cooking on the hob – put all the ingredients into a saucepan with a lid and simmer on low for 30 minutes. Stir frequently to prevent it sticking to the pan.
Serves 4 people.
