Cucumber Salad

1 cucumber
1 Tblsp olive oil
2 Tblsp vinegar
1 small sweet onion or spring onions, finely chopped
salt and pepper
1/4 tsp dried dill
Halve the cucumber lengthways, and peel from the centre to the tip. Slice into thin even slices. Mix together dressing and add cucumber. Toss with remaining ingredients and serve chilled.
This salad is very juicy and children love the juice.
If less juice is required sprinkle the cucumber slices with salt and leave to drain for 30 minutes. Wash the cucumber slices.
