Lemon Cream

1 lemon
2 Tblsp semolina
1 pt 600mls water
3 Tblsp sugar
Put the grated rind of the lemon and water in a saucepan and bring to the boil. Sprinkle on the semolina and simmer for 10 minutes.
Mix the sugar and lemon juice together, then add the semolina.
When almost cold whisk well and leave to set.
Can be poured into individual dessert bowls to set.
Decorate with a small wedge of lemon if desired.
Serves 4 people.
