Mixed Fruit Sparklers

A refreshing dessert from New Zealand.
8 ozs 225 gms galia melon, scooped into balls
2 kiwi fruit. peeled and sliced
2 ozs 50 gms redcurrants
2 ozs 50 gms raspberries
1/2 pt 300 mls sparkling white wine, chilled
1/2 pt 300mls lemonade, chilled
zest of a lemon
4 sprigs of lemon balm
Mix all the fruit together and chill for 15 minutes.
Just before serving mix together the lemonade and sparkling wine.
Place the fruit in 4 goblets, pour over the wine mixture and serve decorated with lemon zest and a sprig of lemon balm.
Serve immediately.
