Rice Pudding

My Father makes a delicious rice pudding which we love.
4 ozs 125 gms ground rice
21/4 pts 1350 mls water
4 ozs 125 gms sugar
1 tsp caraway seeds
1 tsp fennel seeds
1 tsp aniseed
pinch of ground ginger
almonds blanched and chopped or hazelnuts to garnish
Mix the ground rice to a smooth paste with some cold water. Add the sugar, caraway seeds, fennel seeds and aniseed and mix well. Bring the remaining water to the boil with the ginger. Add the ground rice paste gradually, stirring with a wooden spoon. Bring to the boil and allow to simmer until thick, about 1 hour. Pour into a serving bowl.
Allow to cool and chill.
Serve decorated with nuts. Serves 4 people.
