Onions and Potatoes

Vegetable Dish
Ingredients
3/4 lb 350 g button onions
1 lb 450 g new potatoes, scraped and diced, or old potatoes peeled
1 ozs 25 g vegan margarine
1 tsp sugar
1/2 pt 300 mls vegetable stock
salt to taste
1 Tblsp chopped fresh parsley
Method
Blanch the onions by putting them in a pan of cold water and bringing them to the boil, strain, cool and peel. Place in a flameproof casserole dish with margarine, sugar, salt, and stock. Boil gently until onions are tender and stock has reduced by half. Cook potatoes in boiling salt water. Drain and add to the onions. Mix together. Serve sprinkled with parsley.
Serves 4 people. Serve with a main dish.
