Soya Bean

Soya bean is equal to meat in food value. It is starchless, high in protein, Vitamin B, Calcium and Amino acids.
Soya beans must be soaked overnight: use 3 cups of water to 1 cup of beans. In hot weather place in the refrigerator to stop fermentation.
Soya beans are cooked in their pod. Drop the beans into boiling water and cook for 5 minutes. Drain and allow to cool. Slip the beans from their pods by pressing the beans between two fingers. Cook the shelled beans in boiling water for 15 minutes.
The soya bean always remains firm and chewy.
It has a nutty flavour.
