White Loaf

BREAD
Ingredients

1 quantity of potato dough, blogged 31.1 12
soya milk to glaze
sesame seeds or poppy seeds
Method
Shape dough to fit a 2 lb 1 kg loaf tin, greased with vegan margarine.
Brush with soya milk and sprinkle with seeds of choice.
Cover the dough and leave in a warm place to prove for 45 minutes until double in size.
Bake in oven 230C, 450F, Gas Mark 8 until well risen and brown on the top.
Turn onto a cooling rack. The bottom should sound hollow when tapped.
Allow to cool before slicing..
Freezes well.
Variations
Use your imagination and likes.
When we had a glut of mangoes I added chopped mangoes and used a little less soya milk in the dough to compensate for the juice in the mangoes.
Add 25 gms 1 ozs of pumpkin seeds; sun dried tomatoes and basil; chopped olives; apricots; or sliced almonds. Depending on the bulk of the additions you may have to split the dough into two smaller loaf tins.
