Masala Potatoes

A recipe from Mrs Sushyla who kindly invited us to a delicious meal in her home in Vallore, India. She was the Social Worker in the Christian Hospital where I worked for 6 weeks.
1Kg 2lbs small new potatoes, scrubbed
1 large Spanish onion, peeled and sliced
1 Tblsp olive oil
2 Tblsp hot curry powder
125g 4 ozs or 1 small tin tomatoes, chopped
Cook the potatoes in a pan of salted boiling water for 10 minutes until still firm to prick. Drain well.
Heat the oil in a pan and add the onion. Cook for 2 minutes then add the curry powder. Cook for 2 minutes then stir in the potatoes and tomatoes. Simmer for 30 minutes, uncovered.
Serves 4 people. Serve with accompaning main meal.
