Food soaked in a marinade before cooking is improved in flavour and texture. Also use the marinade to pour over food that is cooking to prevent it from burning, or use as a sauce or dip.
4 Tblsp vegetable oil
juice of 1 lemon
1 Tblsp soya sauce
1 Tblsp vinegar
1 Tblsp tomato sauce
1 tsp dry mustard
1 tsp mixed herbs
1 Tblsp chutney (home made see under Chutneys) or 1/2 tsp yeast extract
salt and pepper
Mix all the ingredients together, in a jar with a lid, and shake well.
Soak the food in the marinade for at least 1/2 an hour.
Ideal for BBQ foods.
