Pea Soup with Mint

A delicious flavour suitable for non-vegan guests.
8ozs 225g whole dried peas, soaked and drained
1 onion, chopped
1ozs 25g vegan margarine
3pts 1 3/4 Lts water
salt, pepper and sugar
lemon juice
bunch of mint, save 4 sprigs of leaves for decoration
Fry onion in the margarine for 5 minutes. Add the peas and water. Bring to the boil, cover and simmer for 1 hour until the peas are soft.
Add the mint and liquidise. Return to the pan and season with salt, pepper and sugar to your taste.
Serves 4 people.
Serve decorated with a sprig of mint leaves and croutons.
