Fruit Loaf

Ingredients
8 ozs 225g brown sugar
5 fl ozs 150mls water
3 ozs 75g raisins
3 ozs 75g sultanas
1/2 tsp nutmeg
3 ozs 75g vegan margarine
1 tsp cinnamon
1 tsp ginger
1/4 tsp salt
8 ozs 225g flour
1/2 tsp baking powder
1 tsp soda bicarbonate
Method
Boil together sugar, water, fruit, nutmeg, margarine, cinnamon, ginger and salt for 3 minutes. Allow to cool. Stir together flour, baking powder and soda bicarbonate. Fold the flour into the fruit mixture.
Pre-heat the oven to 300F, 150C, Mk2. Pour mixture into a greased 1 lb 450g bread tin. Bake for 1 hour.
