Lentil and Tofu Roast

Ingredients
1lb 450g cooked lentils
8ozs 225g tofu, crumbled
1 onion, chopped
1 Tblsp vegetable oil
1 tsp mixed herbs
1 tsp cayenne pepper
salt
Method
Saute onions in oil. Combine all the ingredients.
Place in a greased casserole dish. Cover and bake for 30 minutes at 350F, 180C, gas Mk 4. Uncover and bake for a further 15 minutes.
Serve hot or cold with a salad.
Serves 4 people.
