Leek Curls

Use as a side dish or to help decorate a salad or main dish.
4 small leeks
vegetable oil for deep frying
Cur off the top of the leeks where the leaves are splayed. Remove any dirty outer leaves.
Cut the leeks in half length-ways. Cut into half inch 2 cms strips.
Place in a bowl of cold water and refrigerate for 2 hours.
Drain the strips and pat them dry with kitchen paper.
Deep fry the leek strips until brown and crisp.
Drain on kitchen paper.
