Tomato and Orange Soup

A Zambian recipe passed down from my wonderful Mother-in-law, This definitely has a colonial influence about it.
Ingredients
6 oranges
1lb 450g tomatoes
1/4 pt 150mls cheap sherry
1 Tblsp brandy
2 tsp sugar
salt and pepper
juice of 1/2 a lemon
mint, chopped to decorate
croutons
Method
Stew tomatoes in a pint 600mls water until soft then sieve or liquidize. Squeeze the juice from the oranges and put in a saucepan with the tomatoes. Stir in the sugar, lemon juice, salt and pepper to taste. Bring to the boil. Stir in the sherry and brandy and boil for 1 minute only.
Serve hot or cold with mint to decorate and croutons.
Serves 4 people.
