Summer Fruit Soup or Sweet

This soup/sweet is full of strong flavours and therefore suitable to serve as a starter or sweet to non-vegan guests.
2 large cooking apples, peeled, cored and thickly sliced
2 firm pears, peeled, cored and thickly sliced
6 apricots, stoned
a few cherries or grapes, deseeded
6 plums or greengages, stoned
1 lemon
sugar to taste, 2-4 ozs 50-100g
1 tsp ground cinnamon
Prepare the fruit and put in a saucepan with 3 pts 1 1/2 lts water, juice of 1/2 the lemon and 2ozs 50g sugar. Bring to the boil and simmer for 10 minutes, covered, until fruit is tender. Taste and if necessary add more sugar. You can allow the apples and pears to disintegrate or keep them separate and firm by adding them now. Cook for a further 5 minutes.
Place in a serving bowl and dust with cinnamon and a thin slice of lemon.
Serve hot or cold. Serves 4 people.
Soup:- serve with a small bowl of new potatoes.
Sweet:- serve with coconut cream.
The fruit maybe varied to suit taste and seasons.
