Avocado Pears Stuffed

One of our homes in Rhodesia (Zimbabwe) had a large avocado pear tree overladen with large fruit, hence so many avocado recipes!
Ingredients
2 avocado pears, ripe
1 small pineapple, diced
1 small paw-paw, diced
1 Dtsp coconut
Dressing
1 Tblsp sugar
2 Tblsp soya milk
1 Tblsp lemon juice
Method
Cut the avocados in half and remove the stone. Mix the cubed fruit together and fill the avocado centres. Sprinkle with grated coconut.
Mix the sugar, soya milk and lemon juice together. Place in a jug and serve separately as a dressing.
Serves 4 people
