Avocado and Pear Starter

Mother-in-laws recipe from Zambia. Makes a colourful starter for Christmas Dinner.
2 avocado pears, peeled and stoned
2 large ripe tomatoes, sliced
1 lettuce
Lime and Basil Dressing
juice of 1 lime
3 Tblsp olive oil
1 clove garlic crushed
4 leaves of fresh basil, chopped
salt and pepper to taste
Cut the avocado pear into horseshoe shaped pieces. Place a slice of tomato in each.
Place all the ingredients for the dressing into a jar with a lid and shake hard until well mixed.
Serve on a bed of lettuce. Pour over the dressing.
Serves 4 people.
