Custard Fool

4Tblsp custard powder
2 pts 1Lt soya milk
4Dsp sugar
1lb 450g pureed soft fruit eg. stewed apples, raspberries, stewed gooseberries
Use a little of the soya milk to dissolve custard powder and sugar. Heat the remaining soya milk to almost boiling, add the dissolved custard powder and stir until it thickens.
Whisk in the pureed soft fruit of your choice, saving a little to garnish.
Place in a large bowl and allow to cool and set. Garnish with remaining puree.
Serves 4 people.
Custard is delicious on its own warm or cold or poured over another pudding.
Sliced bananas, passion fruit or mandarins are lovely added to custard.
