Bhajias or Chilli Bites

A recipe from my friend Noori in Zimbabwe.
Ingredients
4ozs 125g wholemeal flour
1 medium onion, grated
1 tsp ground cumin
salt and pepper
1 Tblsp cake flour
1 medium potato, grated
1 chilli, chopped
1 tsp baking powder
Method
Mix together dry ingredients in a bowl. Add rest of the ingredients with enough water to make a thick batter.
Take 1 Dsp at a time and drop it into a pan of hot vegetable oil. Fry to a light golden colour, making sure they are cooked inside.
Drain on kitchen paper.
Serve warm.
Variations
Add a cupful of shredded lettuce, or spinach or watercress to the basic recipe.
Diced small, potatoes, bananas or marrow can be added.
