Watercress Dressing

After cyclone Yasi we have had torrential rain almost none stop for 6 weeks. I can sympathise with Mrs. Noah, but she was totally cut off from the world, I have only been inconvenienced by water in our satellite dish and no connection for 2 weeks.

1 bunch watercress
2Tblsp lemon juice
1Tblsp vinegar
1tsp dried tarragon
5Tblsp olive oil
salt and pepper
Chop the watercress finely and set aside.
Mix all the other ingredients together and blend well.
Stir in the watercress.
Use over green salads or as an alternative dressing on a potato salad.
