5 slices of wholemeal bread without crusts
1 large cucumber, peeled and chopped
2 cloves garlic, crushed
juice of 1/2 a lemon
salt and pepper
to garnish, 1 tsp paprika mixed with 1 Tblsp olive oil
Soak bread in water and squeeze dry. Mix with other ingredients. Puree to a smooth cream. Place in a serving dish and chill.
Serve garnished with the oil and paprika.
This is delicious as a side salad or on Melba toast or served as nibbles with slices of raw vegetables i.e. celery, carrots and capsicum.
