Spanish Salad

We love to have holidays in Spain and this Spanish salad is very refreshing.

1 salad onion, thinly sliced
1 orange, peeled
salt and pepper
4 Tblsp olive oil
4 Tblsp vinegar
1 lettuce
Separate the onion slices into rings and place in a bowl. Break the orange into segments removing membranes and pips. Place into bowl.
Beat together the dressing and pour over. Leave to marinate for 1 hour.
Wash and dry the lettuce and tear into pieces. Toss in the marinade just before serving.
Serves 4.
