This was served to me by a young girl in a bedsit in Sheffield, UK, (1983). I had a 10am appointment with her to discuss the pros and cons of being a vegan. She was still in bed with her female companion when I arrived. Their shared breakfast was delicious and most welcome.
1 onion, chopped
1/2lb 225g tofu
1 clove garlic, crushed
2ozs 50g vegetable oil
pinch of turmeric
Fry onions and garlic in hot oil until soft. Add salt, pepper, yeast extract and soya sauce to taste. add the pinch of turmeric to give colour. add the tofu and fry until brown.
Turn out onto a piece of toast.
Makes a good breakfast for 1.
Chopped tomatoes or mushrooms or capsicums can be added to the tofu.
