Chocolate Squares

Always a favourite with the children.
Ingredients
4ozs 125g rolled oats
3ozs 75g coconut
6ozs175g vegan margarine
4ozs 125g sugar
4ozs 125g flour
1 Dsp cocoa
1/2 tsp baking powder
Method
Cream sugar and margarine together. Add all the dry ingredients. Mix well. Press the mixture into a greased swiss-roll tin.
Bake in pre-heated oven 375F, 190C, Mk5 for 20 minutes.
Ice with water icing while hot.
Water Icing
Ingredients
12ozs 350g icing sugar
1/2 tsp vanilla essence
2 Dsp cocoa
4 Tblsp hot water
Method
Beat ingredients together until mixture thickens. Pour over hot base.
Allow to cool. Cut into 2 inch, 2.5 cm squares and lift out of the swiss-roll tin.
Makes 15 squares.

    I have your cookery book somewhere, not sure where, and used to make and donate the chocolate squares in the late 1990s to Southampton’s twice-yearly Animal Welfare Charities Bazaar (think it was called Animal Welfare Market at the time). Very nice, not sure why I stopped making them for it. Maybe because people preferred cakes.

    • Thank you John. Last year the Guardian did an article on Vegan’s and mentioned my book saying that I was before my time! It did jolt the Vegan Society into printing real cookery books not just leaflets. I believe Gourmet Vegan can still be found on Amazon but I have put most of the recipes into my blog. You obviously enjoy cooking. I hope that I can stimulate you to follow my blog. I only get round to putting a couple of recipes on a month. Enjoy.
