Aduki Bean Slice

2ozs 50g aduki beans
4ozs 125g apples
1tsp cinnamon

Base and Topping
4ozs 125g oats
1Tblsp vegetable oil
2ozs 50g coconut or ground nuts

Soak the aduki beans, according to packet, then cook for 30mins. Slice the apples thinly.
Mash beans and apples together and add cinnamon.
Heat oven to 370F, 190C, Mk 5.
Mix all the base ingredients together in a bowl. Oil a sponge tin. Place 1/2 mixture on the base. Add filling. Cover with topping. Bake for 30mins until brown.
Serve with liquidised Apricot Compote, (next recipe) or an orange or lemon fruit sauce, (recipe to be added).
Serves 4

The only way I could get my children to eat this slice was with lashings of sauce!
